Along the paths in Aubrac in early summer, a large umbellifer grows with a slightly bitter citrus scent: the mountain hogweed.

They have a citrus aroma that is very present naturally and we highlight it through our roasting work.
These beans also develop in a second time, a discreet aromatic of spices close to those of curry.
